Silly Billy's Chunky Chili
You will need:
* 10 - 12 large tomatoes
* 1 Pound ground beef
* 1 Pound boneless chicken
* 2 Green bell peppers
* 1 Medium sized onion
* 2 Long hot peppers
* 3 Orange habanero peppers
* 5 Cerrano peppers
* 1 Small bottle chili powder(they come in 2 sizes)
* 2 Tablespoons cumin
* 1 28 Ounce can tomato sauce
* 2 15 Ounce cans each of dark and light red kidney beans
(Total of 4 cans)
* 1 large can chick peas
Prep work:
Cut each tomato into 12 chunks, discarding top navels
Mince entire onion (best to use food processor) and brown in skillet with ground beef.
Cook chicken at 350 degrees for 25 minutes, cut into chunks.
Slice bell peppers into slices about one quarter inch thick, discard seed ball, cut each quarter
inch slice into lengths of about one inch.
Mince all hot peppers, long hots, habaneros, and cerranos fine(Again, food processor is best)
Put kidney beans and chick peas aside and mix all other ingredients together in a large pot
Cook covered on medium high heat for about an hour and a half, stirring thoroughly every 15
minutes or so. Drain kidney beans and chick peas and add, mixing all in thoroughly continue
cooking covered for another 20 minutes.
Remove from heat and let sit covered for at least 3 hours.
Reheat before serving.
It's always best with shredded mozzarella or monterey jack cheese melted on top!
